China produces approximately 85–90% of the world's spinach, primarily consumed domestically and in regional East Asian trade. The United States (California — Salinas and Yuma valleys) is the benchmark origin for premium baby spinach and RTE washed retail bags, supplying North American and some European retailers. The Netherlands produces year-round greenhouse and field spinach for European markets. Spain (Murcia, Almería) exports field spinach to the UK, Germany, and France from October to June. Kenya exports premium baby spinach by air freight to European supermarkets, filling the Northern European winter supply gap.

Fresh bunched spinach (savoy/curly leaf or flat leaf): traditional market format, wilts rapidly, primarily local/regional trade. Baby leaf spinach (harvest at 25–35 days): the dominant premium retail format globally; small, tender, flat leaves in RTE washed bags. Semi-savoy spinach (slight crinkle): compromise between savoy and flat leaf; standard for both fresh and IQF processing. IQF chopped spinach: blanched, IQF, individually frozen in block or chunk form; the largest volume format for food manufacturing (soups, frozen meals, pasta fillings, quiche). Spinach purée: cooked and blended, used in baby food, sauces, and food colouring. Dried/dehydrated spinach powder: used as natural food colouring and nutrient fortification ingredient.

Spinach and other leafy greens are the highest-risk fresh produce category for microbial contamination. High-profile US E. coli O157:H7 outbreaks traced to bagged baby spinach (2006, California) led to the formation of the Leafy Greens Marketing Agreement (LGMA) in the US. EU Regulation 2073/2005 sets Listeria monocytogenes criteria: absent in 25g for RTE fresh-cut products at end of shelf life. EU Reg 2073/2005 also sets E. coli criteria. FSSC 22000 and BRC/IFS are the minimum certifications for RTE spinach processing. Critical controls: agricultural water testing (E. coli ≤126 MPN/100 ml per FSMA), animal exclusion at growing fields, sanitation of processing equipment, and cold chain integrity.
