India dominates global gherkin exports, producing 500,000–700,000 tonnes of fresh pickling cucumbers annually, primarily in Karnataka, Andhra Pradesh, and Tamil Nadu. The Netherlands is a major processing and re-export hub: Dutch companies buy Indian and Turkish brined gherkins, process them into retail pickle products, and distribute across Europe. Poland is a significant Eastern European gherkin producer, known for traditional dill (ogórek kiszony) and vinegar-pickled styles exported to Germany and the UK. China exports processed gherkin products to Asia and North America. The global pickle market exceeds $12 billion annually.

Fresh pickling cucumbers: harvested at 4–10 cm, graded by diameter (grades 2/4/6/8/10 mm increment steps). Brined gherkins (salt-preserved in 18–20% NaCl brine): exported in 200-litre drums or 1,000-litre IBCs from India and Turkey; used as raw material for European pickle processors. Sweet gherkins: marinated in vinegar/sugar brine with spices; Eastern European-style dill gherkins: lacto-fermented (naturally soured); Cornichons: French-style small whole gherkins (Grade 0–2, under 5 cm) in white wine vinegar. Sliced and diced gherkins: for food-service (burger/sandwich industry) and food manufacturing.

EU Regulation 1151/2012 protects several gherkin PDOs/PGIs including Spreewald Gurken (Germany, PGI) and Ogórek Małopolski (Poland, PGI). For Indian brined gherkin exports, buyers require GlobalGAP for fresh cucumber production, BRC/IFS or FSSC 22000 for brine/processing facilities, and Spices Board India registration for exports.
