Spain (Murcia, Almería) is Europe's largest lettuce exporter, supplying iceberg, romaine, and Little Gem to UK, German, French, and Scandinavian supermarkets from September to June. Iceberg/crisphead (Batavia type): firm, crisp, long shelf life (21–28 days), dominant in UK and German retail and food-service. Romaine/Cos (tall, elongated head): standard for Caesar salad; dominant in US retail and growing in Europe. Butterhead/Bibb (Boston, Buttercrunch): soft, buttery leaves, short shelf life (7–10 days), dominant in French/Belgian retail, sold with root as "potted lettuce" in northern European markets. Loose-leaf/Lollo Rosso/Lollo Bionda: ruffled leaves, sold as whole heads or cut leaves in salad packs. Little Gem (mini romaine): UK and European premium retail growth category. Baby leaf lettuce blends: harvested at 14–21 days as cut shoots; the primary ingredient in mixed leaf salad bags.
Food Safety: Listeria, E. coli & RTE Controls
Lettuce and leafy salads are the highest food safety risk category in fresh produce. EU Regulation 2073/2005 applies to all RTE fresh-cut leafy products: Listeria monocytogenes absent in 25g at end of shelf life; E. coli criteria apply at processing. FSMA Food Traceability Rule (Section 204, effective January 2026) mandates enhanced lot traceability for leafy greens including lettuce. The California Leafy Greens Marketing Agreement (LGMA) covers romaine and head lettuce in addition to spinach.
