China produces approximately 35 million tonnes of cabbage annually, predominantly consumed domestically and traded regionally across Asia. The Netherlands is Europe's leading cabbage exporter, with large-scale commercial white and red cabbage production in North Holland and Zeeland. Poland is a major producer of white cabbage (used for sauerkraut manufacturing) and red cabbage, exporting to Germany, the UK, and Scandinavia. India exports cabbage to neighbouring South Asian markets and the Middle East. South Korea is the dominant producer and exporter of Napa/Chinese cabbage (Baechu), the basis of kimchi — exported globally as fresh heads and as semi-processed salted cabbage (jeol-im baechu) for kimchi manufacturers.

White/green cabbage (round head): the dominant global commercial variety; used fresh in coleslaw, fermented as sauerkraut/kimchi, and for food processing (coleslaw mixes). Red/purple cabbage: anthocyanin-rich, natural food colouring source, shredded for retail salad packs. Savoy cabbage: crinkled leaves, more delicate flavour and texture, premium European retail. Pointed/sweetheart cabbage: elongated conical shape, tender leaves, faster-growing, premium UK and northern European market. Chinese/napa cabbage (Brassica rapa subsp. pekinensis): used extensively in Asian cuisine and kimchi. Flat/Dutch white cabbage: higher dry matter and sugar content, preferred for sauerkraut manufacturing.

UNECE Standard FFV-48 governs cabbage quality grades in European trade (Extra, Class I, Class II), covering head firmness, weight, and freedom from defects and external rots. EU MRL Regulation 396/2005 applies; cabbages are occasionally flagged in RASFF for lambda-cyhalothrin and chlorpyrifos residues. Glucosinolates in Brassica crops are a natural anti-nutritional factor — not a safety concern at normal dietary levels but relevant for animal feed specifications. GlobalGAP is the minimum certification for European retail. Dutch cabbage exporters typically also hold PlanetProof or MPS environmental certification.
