Black Beauty/globe eggplant (standard US type): dominant in conventional retail and Italian-American foodservice. Japanese eggplant (long, slender, thin skin): strong demand in Asian-American grocery and Japanese/Korean restaurants. Chinese eggplant (longer, lighter purple): popular in Chinese-American foodservice. Indian brinjal (small round and large round): ethnic grocery for South Asian diaspora. Italian varieties (Rosa Bianca, Listada de Gandia): specialty/heirloom market in farmers' markets, natural grocery, and chef-driven restaurants. FSMA Produce Safety Rule applies to eggplant growers and packers. US importers must implement FSVP for foreign eggplant suppliers. Eggplant has not been frequently associated with major US foodborne illness outbreaks, but FSMA compliance — particularly water testing and worker hygiene — is required for all regulated produce farms.
