The terms 'rapeseed' and 'canola' are often used interchangeably but carry specific technical meaning. Traditional rapeseed contained high levels of erucic acid (a long-chain fatty acid, 20–50% of total fatty acids) and glucosinolates — both of which are undesirable for human food and animal feed use. Modern 'canola' varieties were developed in Canada in the 1970s through conventional breeding to contain: erucic acid ≤2% of total fatty acids (Codex standard for canola oil); and glucosinolates ≤30 µmol/g seed (air-dry basis). These are the defining parameters for the 'double-zero' or '00' designation widely used in European markets.
