Food washing and sorting — machinery overview

Washing and sorting are essential first processing stages for almost all raw agricultural produce and for many intermediate food products. Washing removes soil, agrochemical residues, surface microorganisms, and other contaminants from the surface of fruit, vegetables, grains, and seafood. Industrial washing systems include bubble washers (air bubbles agitate the water around the product, removing loose soil); spray washers (high-pressure or low-pressure water jets wash the product surface); rotary drum washers (product tumbles in a rotating drum with water spray or immersion); and ultrasonic washers (for delicate surfaces or highly effective residue removal). Sorting separates product by size, weight, colour, shape, or defect level. Industrial sorting equipment includes rotary screen graders (size); weight graders (dynamic checkweighers that divert product to different grades by weight); optical colour sorters (camera and air-ejector systems that identify and remove off-colour or defective pieces); laser or 3D shape sorters; and manual inspection conveyors (for final visual inspection). Metal detection and X-ray inspection are not sorting tools but are food safety inspection systems that should be integrated at critical control points in the line.
