Ginger and garlic are typically dried at 55–65°C. For any new spice type, the effect of drying temperature on product quality (aroma intensity, colour, volatile oil content) should be validated before committing to a production drying temperature.
Can the same dryer be used for multiple spice types?
A dryer can process multiple spice types provided effective cleaning between types is possible.
