The sensitivity is defined by the smallest test piece that the detector reliably detects at the set sensitivity (e.g. 2.0 mm ferrous sphere, 2.5 mm non-ferrous sphere, 3.5 mm stainless steel sphere — these are example figures only; the achievable sensitivity depends on the specific product and aperture size). Retailers and food standards bodies often specify their own minimum sensitivity requirements (e.g. 1.5 mm Fe, 2.0 mm non-Fe, 2.5 mm SS) — these are not universal and vary by retailer code of practice. The metal detector sensitivity must be set and validated for each specific product type, because the electrical conductivity and moisture of the product affects the detector's ability to detect small metal fragments.
How often must a food metal detector be tested and calibrated?
A food metal detector must be tested with certified test pieces at the start and end of each production run (at minimum), and at regular intervals during the production run as specified in the HACCP plan. The test frequency should be based on the risk: how frequently does the metal detector's sensitivity drift or fail? What is the quantity of product that would need to be placed on hold if a failure is detected? More frequent testing (e.g. every 30–60 minutes) reduces the hold quantity in the event of a failure.
