High oleic sunflower oil (HOSO) is produced from specially bred high-oleic sunflower seed varieties that produce oil with an inverted fatty acid profile compared to standard sunflower oil. Where standard refined sunflower oil contains 60–70% polyunsaturated linoleic acid (C18:2) and 15–25% monounsaturated oleic acid (C18:1), high-oleic sunflower oil contains approximately 80–90% oleic acid and only 3–8% linoleic acid — a profile comparable to refined olive oil or high-oleic canola.
Why oxidative stability matters in commercial frying: Polyunsaturated fatty acids (PUFAs like linoleic acid) are far more susceptible to oxidation at frying temperatures than monounsaturated fats (MUFAs like oleic acid).
