Automated poultry processing follows a defined sequence of stations. Live birds are shackled onto an overhead conveyor. Stunning (electrical water-bath or gas stunning) renders birds insensible before slaughter. After slaughter and bleed-out, carcasses enter the scalder — hot water at a controlled temperature loosens feathers (soft-scald at around 52°C retains yellow skin; hard-scald at 60–65°C removes cuticle for white-skin markets). Defeathering machines use rubber fingers rotating at high speed to remove feathers from the loosened carcass. After defeathering, carcasses pass through a singeing flame to remove fine hairs, then to venting, evisceration, and giblet harvesting stations. The final carcass is washed, inspected, and chilled — either by air chilling (EU standard) or water immersion chilling (common in the USA and elsewhere). After chilling, carcasses are graded and either dispatched whole or passed to a cut-up line for portioning.

Slaughter-line design for Halal certification must be reviewed with the relevant Halal certification body before finalising equipment specifications.
