What raw material temperature is required for meat forming?
For consistent forming and good portion release from the mould, the meat mix temperature must be managed carefully. Temperatures that are too warm (above +4°C) produce a soft, sticky product that does not release cleanly from the forming cavities and produces irregular-shaped portions. Too cold (below -4°C) makes the mix stiff, difficult to feed consistently into the former, and may result in crumbling and poor cohesion. The optimum temperature for most ground meat forming is -2°C to +2°C — this gives a firm but pliable mix that releases cleanly from the mould cavities and holds its shape well. Chill the meat mix thoroughly before forming and manage the temperature of the production area.
What binding agents are used in formed and restructured meat products?
Some formed meat products (particularly those made from restructured whole-muscle meat rather than ground meat) require a binding agent to hold the formed shape.
