Trolley tunnel dryers are widely used in pasta drying (where long, controlled drying curves are required to prevent cracking); large-scale bakery (biscuit, cracker, and cookie drying after baking or before packaging); and industrial scale herb, spice, and food ingredient drying where the product is on trays and volume requires a semi-continuous approach. The drying zones in a tunnel dryer can be set to different temperatures and air humidity levels — allowing a multi-stage drying profile to be programmed for products sensitive to rapid drying.

What is the drying curve and why does it matter for pasta?
The drying curve describes how the product moisture decreases over time and how the drying temperature (and relative humidity of the drying air) changes through the drying process. For pasta drying, the drying curve is critical because pasta contains gluten — if dried too rapidly at the beginning of the drying cycle (when the outside surface dries faster than the interior can release moisture), cracks form in the pasta surface or the pasta shape warps. The correct drying curve involves: a pre-drying phase at moderate temperature; a main drying phase at higher temperature; and a relaxation/equalization phase at the end at lower temperature. Traditional long pasta drying curves (used for premium semolina pasta) run for 6–12 hours. Short-cut pasta uses shorter curves.
