A tray dryer (also called a cabinet dryer or hot air oven dryer) is a batch drying machine in which the product is spread in a thin layer on shallow mesh or perforated trays, and the trays are loaded into an insulated cabinet through which heated air circulates. A fan forces air across the trays; the air picks up moisture from the product and is exhausted or recirculated (with partial exhaust to remove moisture). Tray dryers are one of the most versatile and widely used batch drying methods in food processing: suitable for a wide range of products (sliced fruit and vegetables, whole spices, herbs, fish, meat pieces, grain samples); simple to operate and clean; capable of drying different products with only a change of trays between batches; relatively low capital cost; and easy to scale from small pilot quantities to full commercial production by increasing the number of trays and cabinet size. The main limitations are labour intensity (loading and unloading trays) and lower throughput per unit floor area compared to continuous belt dryers.

The product layer thickness on each tray affects drying time and uniformity — thin layers dry faster and more evenly than thick layers. As a general guide: sliced fruits and vegetables are typically loaded 1–2 cm deep (a single or double layer of slices); whole seeds and small spice items may be loaded 2–3 cm deep; herbs are loaded in a very thin layer (1 cm or less) to allow air circulation through the leaf material; fish pieces and meat strips are laid in a single layer without overlapping. If the layer is too thick, the product in the middle of the layer dries much more slowly than the surface, resulting in uneven moisture content across the batch. Some operators turn or re-spread the trays part-way through the drying cycle to improve uniformity.
Can a tray dryer be used for products requiring GMP conditions?
Yes — tray dryers can be designed to GMP (Good Manufacturing Practice) standards. GMP-compliant designs include: stainless steel 304 or 316L interior surfaces and trays; smooth, cleanable internal surfaces with no horizontal ledges where product can accumulate; doors with hygienic seals; air filtration on the air inlet; and temperature monitoring with validated calibration. For food applications, the dryer temperature uniformity (temperature variation between different positions in the loaded cabinet) should be validated — this is critical for ensuring all product in every tray position reaches the required drying temperature or remains below the maximum allowable temperature. Validation of temperature uniformity with and without product load is a requirement for GMP-grade drying operations.
