Hard candy (boiled sweet) production involves cooking a sugar and glucose syrup solution to a high temperature (150–165°C), driving off water to produce a glass-like sugar mass, then forming and cooling. A complete hard candy production line includes: sugar and glucose syrup batch cooking (vacuum or open kettle cooker); colour and flavour addition (on the cooling table or in a batch roller); batch rolling and temperature conditioning; rope forming (a rope-pulling and sizing machine reduces the candy mass to a rope of consistent diameter); forming (a die-stamping machine — cut-and-wrap — cuts and stamps individual pieces from the rope); cooling conveyor; and wrapping. For filled candies (hard candy with a liquid, soft, or chewy centre), a co-extrusion head on the rope former introduces the filling material simultaneously as the outer candy shell. The key characteristic is the hard, glassy texture and slow dissolution in the mouth. Soft candy (jelly, gummy, fondant, caramel, toffee, nougat) retains more moisture and contains different ingredients (gelatin, pectin, starch, fat) that produce a chewy, soft, or plastic texture. What are the cooling requirements for hard candy?

After forming, hard candy must be cooled efficiently and then immediately wrapped or packed in moisture-proof packaging. Cooling is done on a cooling conveyor in a low-humidity, air-conditioned room. Production of hard candy in humid climates is particularly challenging — the production room humidity must be controlled with air conditioning to avoid surface stickiness during cooling and on the wrapping line.
