Bakery oven types — selection guide
Deck ovens have fixed stone or steel baking decks heated independently from above and below, with individual steam injection. They produce excellent artisan-quality bread with thick crusts and open crumb. Loading and unloading is manual using peels or automatic loaders. They are used in craft bakeries and high-end retail production but are too slow and labour-intensive for industrial scale. Rack ovens load a full wheeled rack of trays which rotates inside the oven chamber for even baking. They offer versatility for multiple product types (bread, rolls, pastry, cakes) on one oven and are the standard for mid-volume mixed bakeries. Tunnel ovens are continuous conveyor ovens that carry product through independently controlled heating zones on a steel band, mesh belt, or stone sole. They are designed for high-volume, continuous production of a limited product range and are the standard for industrial bread, biscuit, and cracker factories. Rotary ovens (turbo ovens) use forced convection with a rotating product carrier and are used particularly for pies, pastries, and baked goods requiring all-round heat exposure.
Energy source and efficiency considerations
Bakery ovens are heated by gas (natural gas or LPG), electricity, or oil (less common). Gas-fired ovens dominate large-scale industrial bakeries because gas provides fast heat recovery and lower operating cost than electricity in most markets. Electric ovens are preferred in locations without gas supply or where electricity is cheaper than gas, and for smaller bakeries where installation simplicity and safety are priorities. Tunnel oven thermal efficiency — the percentage of fuel energy converted to useful baking heat — varies significantly by design and by production rate. At low production speeds (short products, large gaps between products), thermal efficiency drops considerably. Buyers should ask suppliers for specific fuel consumption data (kWh or MJ per tonne of baked product) at the intended production rate — not peak efficiency figures.
