Refined soybean oil is produced from whole soybeans by solvent hexane extraction or mechanical expeller pressing, followed by degumming, neutralisation (or physical refining), bleaching, and deodorisation. The resulting RBD soybean oil is a pale yellow, neutral-flavoured liquid oil that is one of the most traded food commodities in the world — second only to palm oil in global edible oil trade volumes. **Fatty acid profile and properties:** Standard refined soybean oil contains approximately 53–58% linoleic acid (C18:2, polyunsaturated), 17–26% oleic acid (C18:1, monounsaturated), and 9–13% alpha-linolenic acid (C18:3, omega-3). This high PUFA content makes soybean oil rich in essential fatty acids nutritionally but relatively lower in oxidative stability compared to palm olein or high-oleic oils. Smoke point: approximately 225–230°C. **Primary applications:** - **Food manufacturing (dominant use):** Soybean oil is the base oil in the majority of US-produced salad dressings, mayonnaise, margarine, shortenings, and commercial baked goods.
