A potato chip (crisp) production line processes raw potatoes through a defined sequence of stages. Intake and storage: fresh potatoes are received, quality-inspected, and stored under controlled temperature (typically 7–10°C). Washing removes field soil and surface contamination. Peeling by abrasive or steam peeling removes the skin. Slicing uses a centrifugal or rotary slicer to produce uniform slices (typically 1.2–1.5mm for standard chips). Slicers with grooved blades produce ridged (crinkle-cut) chips. Blanching in hot water (70–80°C for 1–3 minutes) removes surface starch, controls colour development during frying, and reduces acrylamide formation. Drying removes surface moisture before frying to reduce oil absorption and prevent splashing. Frying in a continuous belt fryer in vegetable oil produces the characteristic crispy texture. De-oiling conveys the fried chips over a vibrating de-oiling screen. Seasoning in a drum coater applies salt, flavour powders, or liquid seasonings. Packaging on a VFFS machine with multihead weigher and nitrogen flushing preserves freshness.
