In steam injection cooking (direct steam injection), steam is injected directly into the food product or liquid — the steam condenses and adds its heat and condensate water directly into the product. This gives very rapid, even heating but dilutes the product with condensate water (which must be accounted for in the recipe if water content is critical). Steam injection is widely used for rapid pasteurisation and UHT treatment of liquid dairy and liquid food products. In steam jacket cooking (indirect steam heating through a vessel wall — as in a jacketed cooking kettle), the steam heats the food indirectly without contact — no dilution occurs. Steam jacket cooking is the standard for viscous products (jams, sauces, confectionery) where the recipe water balance is important and where the product must not be thinned by condensate.
What food safety parameters are critical for steam cooking equipment?
For steam cooking used as a critical control point (CCP) to eliminate or reduce pathogenic microorganisms in the product (e.g. cooking meat portions, blanching vegetables before ready meal assembly), the key food safety parameters are: the product core temperature (the temperature at the geometric centre of the thickest part of the product must reach the lethal temperature target — typically 70°C for 2 minutes or an equivalent time-temperature combination for the target pathogen); and the cook time and steam conditions that achieve this core temperature.
