Industrial nut roasters include: rotating drum roasters (the product is tumbled in a rotating horizontal drum heated by gas burners — standard for peanut, almond, cashew, and sunflower seed roasting); continuous belt or conveyor roasters (nuts pass through a hot air oven on a mesh belt at a controlled speed — good uniformity for flat nuts like almonds and macadamias); fluidised bed roasters (hot air suspends and agitates the nuts — used for uniform, rapid roasting of small uniform nuts); microwave roasters (shorter roasting times, less surface colour development); and oil roasting (nuts roasted by immersion in hot oil — produces different flavour characteristics from dry roasting).
