The main types are: paddle mixers (a horizontal trough with rotating paddles — used for gentle mixing of whole muscle meat pieces with marinade or spice blends); vacuum mixers (paddle mixer operating under vacuum — removes air from the meat mass, reducing oxidation and improving colour retention in cured products, and helping marinade penetrate into the meat); meat tumblers (a rotating drum in which the product is continuously lifted and dropped — the tumbling action massages and works the meat, improving marinade absorption and texture development in marinated products such as chicken portions and roasts); and sigma blade mixers (for high-viscosity meat emulsions and forcemeats in pâté and fine sausage production).
