Dry milling for grits uses roller mills and sifters to produce coarsely ground maize grits for corn snacks, breakfast cereals, and brewing adjuncts. Wet milling (industrial starch and glucose production) is a separate process requiring steeping, grinding, and centrifugal separation — it uses different equipment from dry milling and is beyond the scope of most small-to-mid scale maize mills.

A roller mill uses counter-rotating rolls to gradually reduce particle size with lower starch damage and more uniform grind. For sifted or super-fine maize meal production, roller milling followed by plansifter separation is required. Hammer mills cannot produce the fine, uniform particle size needed for premium sifted maize meal or export-grade product.
Can a maize mill also process sorghum or millet?
Many small-scale hammer mills and some roller mills can process sorghum and millet with adjustment of screen size and mill settings. However, sorghum and millet have different grain hardness, size, and bran characteristics to maize, and require a modified cleaning and milling setup for good quality output. If you intend to process multiple grain types, inform the supplier and ask them to confirm which grains their equipment is validated for and what configuration changes are required for each grain type.
