A roller mill consists of two (or four in a double-roller mill) counter-rotating rolls through which grain or partially milled material (semolina, break stock) passes, being progressively reduced in particle size by the shearing and compressive action of the rolls. Roller mills are the central machines in modern wheat flour milling systems. Break rolls (corrugated rolls) receive the tempered wheat grain and progressively rupture the grain to release the endosperm from the bran layers without over-grinding the bran. Reduction rolls (smooth or fine-corrugated rolls) progressively reduce the endosperm particles (semolina and middlings) to the final flour particle size. A commercial flour mill requires multiple roller mill passages arranged in a milling diagram — the number of break and reduction passages determines the throughput capacity and the flour extraction achievable. Roller mills for grain milling are also used in other applications: animal feed manufacturing (flaking rolls for rolled oats; crimped rolls for whole grain feed); chocolate refining; and some sugar and spice applications.
