This simplifies the production process by eliminating the nixtamalization and wet milling stages, and allows production from a dry ingredient that can be stored. However, products made from masa harina may have slightly different texture and flavour compared to products made from fresh masa due to the drying and rehydration process. For small-scale or startup operations, a masa harina-based process has significantly lower equipment requirements than a full nixtamalization and wet milling line.
What is the typical tortilla chip thickness and how is it controlled?
Standard commercial tortilla chips are sheeted to approximately 1.8–2.5mm before baking — the masa sheet thickness determines the final chip thickness and texture.
