Sesame oil is sold commercially in three principal grades, each serving distinct applications with very different price and demand profiles. **Refined sesame oil** is produced from sesame seeds using solvent extraction or mechanical pressing followed by RBD refining. The result is a light-coloured, mild-flavoured oil with a smoke point of approximately 210–230°C — suitable for frying, general cooking, and food manufacturing where sesame flavour is not the primary requirement. It is the lowest-priced sesame oil grade and is used in cosmetics, pharmaceutical manufacturing (it is an established carrier oil in injectable formulations), and as a base oil for blending in Asian food manufacturing. **Toasted (roasted) sesame oil** is produced by cold-pressing or expeller pressing deeply roasted sesame seeds, then typically light-filtering without full refining to preserve the characteristic deep amber colour and intense nutty-roasted aroma. This is the most commercially recognised sesame oil in Asian cuisine — the Chinese, Korean, and Japanese condiment sesame oil that is drizzled over dishes after cooking rather than used as a frying medium. Its smoke point is lower (170–180°C) due to the presence of aromatic compounds from roasting, making it unsuitable for high-temperature cooking. Toasted sesame oil commands a significant price premium over refined grade and is primarily used in Asian sauces, dressings, noodles, dumplings, and marinades. **Cold-pressed sesame oil** is produced without heat, pressing unroasted seeds to yield a pale golden oil with a mild sesame aroma. It retains higher levels of sesame lignans (sesamol, sesamolin) and vitamin E, and is positioned in health food and natural cosmetic markets. It is more expensive than refined but less intense in flavour than toasted. For food manufacturing or retail buyers, confirm your required grade clearly — toasted and refined sesame oil look similar in descriptions but have completely different applications, flavour profiles, and price points.
