What is the difference between a hammer mill and a roller mill for flour production?
A hammer mill uses rotating hammers to impact and shatter grain, producing flour in a single pass. It is simple, low-cost, and effective for small-scale or low-specification maize meal and animal feed production, but it produces a coarser, less uniform particle size distribution and higher starch damage than a roller mill. It is not used for commercial wheat white flour production. A roller mill uses counter-rotating fluted or smooth rolls to progressively reduce grain through multiple passages. Roller milling produces higher quality flour with lower starch damage, more uniform particle size, and better colour, and it is the standard for commercial wheat flour and rice milling at all scales above small-village level.
What extraction rate should I specify for wheat flour?
Extraction rate refers to the percentage of flour extracted from the incoming wheat. A standard white bread flour has an extraction rate of 72–75%. Higher extraction rates (80–85%) produce wholemeal or high-fibre flours that include more bran and germ. The extraction rate determines the flour colour, protein content, ash content, and baking performance, and also determines the quantity of bran and germ by-products available for sale. Your target extraction rate should be defined by your customers' specifications. Ask suppliers to confirm the extraction rate achievable with their mill on your wheat type, as this depends on both the mill design and the wheat quality.
