Fish skinning machines remove the skin from fish fillets to produce skinless fillet products for retail and food service. The standard industrial fish skinning machine uses a feed roller (a knurled or roughened roller that grips the fillet skin-side down) and a thin, fixed blade positioned at the nip between the feed roller and a smooth pressure roller. The fillet is placed skin-down at the entry, the feed roller grips the skin and pulls it through the nip while the blade separates the skin from the fillet flesh — the skinned fillet exits on top, and the skin is removed underneath. The quality of the skinned fillet — the closeness of the cut to the skin–flesh interface and the amount of flesh remaining on the skin (the 'skinnery waste') — depends on the blade gap, the blade angle, the roller pressure, and critically the fish temperature and the consistency of the fillet thickness. Chilled fillets (at 0–4°C) skin more cleanly than warm fillets. Some machines include automatic thickness sensing and blade adjustment.
