Fish scaling machines in fish processing lines

Fish scaling (descaling) removes scales from whole fish before gutting and filleting. On commercial fish processing lines, scaling must be fast, consistent, and gentle enough not to damage the fish skin or flesh. The main types of industrial fish scalers include: drum scalers (a rotating drum with a rough or toothed inner surface tumbles the fish, scraping scales off — the scale-removal efficiency depends on the fish species, the drum speed, and the water flow used to flush away removed scales); roller scalers (the fish passes over or between rotating, roughened rollers that remove scales from the fish surface — better suited for larger, flat-sided fish); and inline scalers (the fish is conveyed through a series of scaling rollers or brushes in a linear path — suitable for integration into automated fish processing lines). Scale removal efficiency and skin damage must be evaluated for each fish species and size range separately — a machine optimised for sea bass may not perform well on herring or carp.
