A milk separator (centrifugal cream separator) uses centrifugal force to separate whole milk into cream (the fat-rich phase) and skim milk. In a disc centrifuge, milk enters through the centre and is distributed between closely spaced conical discs rotating at high speed (typically 5,000–10,000 RPM). The higher density skim milk is thrown outward; the lower density cream moves toward the centre and exits from the cream outlet. The fat content of the separated cream can be adjusted by controlling the flow ratio of cream to skim milk (using a throttle valve on the cream outlet) — dairy plants typically standardise both the cream (to a target fat content for further processing) and the skim milk (to a target residual fat content). Milk clarifiers are similar centrifuges used to remove somatic cells, bacteria, and sediment from milk rather than to separate cream — they improve milk microbiological quality and extend shelf life. Self-cleaning separators have automated periodic discharge of the sludge (sediment) collected in the bowl.
