Commercial cooking oil production involves a sequence of processing stages, each requiring specialised machinery. Understanding the full production chain helps buyers identify exactly which equipment they need for their specific capacity and oil type. **Stage 1: Oilseed cleaning and preparation** Incoming oilseeds (sunflower, soybean, rapeseed, palm kernel, etc.) are cleaned to remove foreign material, then cracked, flaked, or cooked (conditioned) depending on the oil type and extraction method being used. Equipment includes seed cleaners, magnetic separators, cracking rolls, flaking mills, and seed conditioners/cookers. **Stage 2: Oil extraction** Two primary methods: expeller/screw pressing (mechanical) and solvent extraction (hexane-based). Expeller presses are used for small-to-medium capacity plants (1–50 TPD input) and for cold-pressed premium oil production. Solvent extraction is used for large-scale operations (50 TPD+) where maximum oil yield from the oilseed is economically critical. Many modern plants use a pre-press followed by solvent extraction of the expeller cake for maximum yield. **Stage 3: Degumming and crude oil treatment** After extraction, crude oil is degummed (removal of phospholipids), treated with acid to break emulsions, and clarified. Water degumming, acid degumming, and enzymatic degumming are the main techniques. Equipment: degumming tanks, centrifuges, settling tanks. **Stage 4: Refining** Two refining routes: chemical (alkali) refining and physical refining. Both remove free fatty acids, colour bodies (bleaching), and odour compounds (deodorisation). Equipment: crystallisation tanks with gentle agitation, membrane filter presses for fractionation. **Stage 6: Filling, bottling, and packaging** Refined oil is filled into retail or food service containers — bottles, drums, IBCs. Equipment: automatic filling machines (volumetric or weight-based), capping machines, labelling machines, carton packing and palletising systems. **Stage 7: Filtration and quality management** Filtration equipment (plate filters, leaf filters, polishing filters) is used at multiple stages in the process — crude oil clarification, post-bleaching, and final product polishing before filling. Oil testing and quality management equipment (spectrophotometers for colour, oxidative stability equipment, GC for fatty acid profiling) supports quality control throughout production.
