Long-grain Indica varieties (including Thai Jasmine/Hom Mali, Vietnamese long-grain, Indian Parboiled, and Pakistani IRRI-6) account for the majority of international trade. Short-grain Japonica varieties (Japanese Koshihikari, Korean Chuchung, Chinese round-grain) command premium pricing for Asian restaurant and retail channels. Aromatic varieties — Basmati (grown in the Indo-Gangetic plains of India and Pakistan, protected under GI status) and Jasmine (Thai Hom Mali, with GI status in Thailand) — carry significant premiums over commodity grades. Parboiled rice (steam-pressure treated before milling) offers improved nutritional retention, longer shelf life, and firmer cooked texture — widely specified for food service and food aid contracts. Glutinous (waxy/sticky) rice is traded for East and Southeast Asian food processing uses. Milling grades include raw paddy (rough rice), brown rice (hulled only), white milled rice, and silky/super-polished rice. The milling degree determines head-rice percentage (percentage of whole unbroken grains) — a key pricing parameter. 100% broken, 25% broken, 10% broken, and 5% broken (5/100% grade) are the standard commercial designations.
