Industrial frozen french fries (chips) production follows a defined process sequence. Potato intake, inspection, and storage: potatoes are received, inspected for quality, and stored under controlled conditions. Washing and peeling: potatoes are cleaned and peeled by abrasive or steam peeling, then trimmed manually or automatically to remove defects. Cutting: strip-cutting machines cut peeled potatoes into strips of the required cross-section (typically 9×9mm, 7×7mm, or 11×11mm). Blanching: cut strips are blanched in hot water or steam to inactivate enzymes and begin pre-cooking, which determines the final texture and colour after freezing and final consumer frying. Drying: surface water is removed before frying to reduce oil absorption. Pre-frying: strips are briefly fried in oil (typically 1.5–3 minutes) to set the outer surface and partially cook the interior. The fries are then de-oiled on a vibrating screen. Freezing: pre-fried strips are IQF (individually quick frozen) in a tunnel or fluidised bed freezer. Sizing and packaging: frozen fries are sized on a vibrating grader to remove shorts and fragments, weighed, and packed into retail bags or bulk cartons.
