Vacuum mixing combines conventional agitation with operation under reduced pressure (vacuum). Removing air from the mixing vessel during processing prevents air incorporation, eliminates oxidation, and removes dissolved gases from the product. Vacuum mixing is used in: meat processing (vacuum paddle mixers for sausage manufacture prevent air pockets and colour oxidation — see also meat mixers); sauce and condiment production (degassing tomato sauce, ketchup, or jam prevents oxidative colour and flavour loss and extends shelf life); margarine and fat spread production (air-free processing of emulsions prevents oxidation); baby food manufacturing (vacuum mixing prevents oxidation in sensitive infant nutrition products); and pet food and speciality emulsions. Vacuum mixing vessels are also used in pharmaceutical and nutraceutical applications. For food applications, vacuum-jacketed vessels with CIP-compatible agitators and a vacuum pump or ejector system are standard. Products filled under vacuum have improved shelf life in oxygen-sensitive applications.

What vacuum level is used in vacuum mixing applications?
Most food vacuum mixing applications use a relatively mild vacuum — typically 200–600 mbar absolute (0.2–0.6 bar absolute, or -0.4 to -0.8 bar gauge). Deep vacuum (below 100 mbar) can cause boiling of water-containing food products at low temperatures, which may be undesirable. For most food applications, a vacuum of 200–300 mbar absolute is sufficient to prevent air incorporation and reduce dissolved oxygen in the product. The vacuum pump must be appropriately sized for the vessel volume and the target vacuum level. Ask the supplier to specify the achievable vacuum level in the vessel, the time to reach it, and the vacuum pump capacity.
