Blanching is a thermal pre-treatment that briefly exposes vegetables (and some fruits) to boiling water or steam at temperatures typically between 85°C and 100°C for times ranging from 30 seconds to several minutes, followed by rapid cooling. Blanching serves several critical functions: enzyme inactivation — it inactivates peroxidase, lipoxygenase, and other enzymes that cause quality deterioration (colour loss, off-flavour, texture changes) during frozen storage and canning; colour stabilisation — chlorophyll in green vegetables is partially stabilised, and the enzyme polyphenol oxidase (which causes browning) is inactivated; volume reduction — blanching wilts vegetables, reducing volume and helping product to settle into cans or bags more efficiently; microbiological reduction — reduces the surface microbial load before freezing or canning; air removal — drives out air from within tissues, which improves canning vacuum and reduces oxidation during frozen storage. Blanching is a standard step in frozen pea, frozen bean, frozen spinach, canned vegetable, and many other vegetable processing lines.
