A frozen vegetable production line integrates all stages from fresh vegetable intake to frozen, packed finished product. The standard process sequence is: raw vegetable reception and inspection; washing (drum washer or air-bubble washer depending on vegetable type); grading and sorting (by size, weight, or optical inspection); cutting or trimming (for vegetables requiring size reduction — dice, slice, floret); blanching (steam or hot water to inactivate enzymes and reduce microbial load); cooling and dewatering (water or air chilling to below 10°C after blanching); IQF freezing (Individual Quick Freeze — conveyor through an air blast or impingement freezer at -35°C to -40°C to freeze each piece individually without clumping); check-screening for foreign body detection (metal detection or X-ray inspection); weighing and packaging (into retail bags, institutional packs, or bulk cartons); and cold store at -18°C to -22°C. IQF freezing is the standard for premium frozen vegetables — each piece freezes individually, preventing clumping, and maintains the texture and appearance of the fresh product better than block freezing.
