Drip loss is the fluid that exudes from frozen meat when it thaws — it is released from the meat cells as a result of ice crystal formation during freezing. Rapid freezing (as achieved by IQF or blast freezing at very low temperatures) produces smaller ice crystals and less cellular damage, resulting in lower drip loss and better quality frozen meat. What freezer type is most suitable for beef burger patties?
