Complete fish processing line — scope and integration

A complete fish processing line integrates all processing stages from raw material intake to packed, finished product — fish scaling, heading, gutting, filleting, skinning, pin-boning, portioning, glazing, IQF freezing, and packing. The exact scope of a complete fish processing installation depends on the target products and the available raw material. For a fresh fish fillet-and-chill line: receiving and icing → grading → scaling → gutting → filleting → skinning → pin-bone removal → portioning → chilling → packing. For a frozen-at-sea or land-based IQF fillet line: similar processing through to portioning, then glazing (light ice coating applied by spray or immersion to protect the frozen fillet surface), IQF freezing (spiral or tunnel freezer), metal detection, weighing, and packing into cartons. For shrimp processing: grading → peeling → deveining → washing → cooking (for cooked product) → IQF freezing → packing. Working with a single supplier or integrator for the complete line simplifies responsibility for overall line performance, yield, and throughput — but many processors also self-integrate by combining machines from different specialist manufacturers.
