Coffee bean sorting removes defective beans that, if included in the roasted product, would contribute off-flavours, bitterness, or visual defects to the finished coffee. Sorting can be applied to green (unroasted) beans before roasting, or to roasted beans after roasting. The main sorting technologies for coffee are: optical colour sorters (high-resolution cameras and near-infrared sensors inspect each bean at high speed; defective beans — black beans, sour beans, mouldy beans, unripe beans, broken beans — are detected and ejected by precisely timed air ejectors; standard in specialty and premium commercial coffee operations); density separators (air density tables or gravity separators separate beans by density — lightweight, defective, or hollow beans are separated from dense, healthy beans); and laser sorters (use laser light to assess bean surface characteristics).
