Most rice eaten in Nigeria is parboiled long-grain rice, and that is what nearly all wholesale trade is in. Parboiling means the paddy is soaked and steamed before milling, which hardens the grain, reduces breakage and gives the firm, separate grains that Nigerian cooking favours.
Locally milled rice now comes in two broad kinds. The first is branded rice from large integrated mills, which use mechanical dryers, de-stoners and colour sorters and pack in printed bags. The second is rice from small and medium mills in the producing areas, which varies more in cleanliness and grading and is often sold in plain or lightly branded bags. Speciality local rices also have a following, notably Abakaliki rice from Ebonyi State and ofada rice from the south-west, which is sold unpolished and commands a premium.
