How does target-weight portioning work?
Target-weight portioners combine a scanning system (which measures the weight or density profile of the incoming product in real time) with a controlled cut mechanism. The system calculates where to cut to produce a portion of the target weight, given the actual thickness and density profile of the product at each cut location. This allows the machine to compensate for natural variation in fillet shape and thickness, producing portions closer to the target weight than a fixed-length cut could achieve. The trim (the off-cut from each portion, which does not reach the minimum target weight) is collected separately and may be used as a lower-value product (fish mince, fish cakes). The trade-off between trim percentage, portion weight accuracy, and portion count per fillet must be optimised for each product.
