A fluid bed dryer passes a stream of hot air upward through a perforated distributor plate on which the particulate product rests. When the air velocity reaches the minimum fluidisation velocity for the product, the particles are lifted and suspended in the air stream, creating a fluid-like, turbulent bed of suspended particles. This fluidised state provides very efficient heat and mass transfer between the air and the product particles — all surfaces of each particle are exposed to the hot drying air simultaneously, and drying is rapid and highly uniform. Fluid bed dryers are used for: grain drying (cereal grains, legumes, seeds); sugar and confectionery granules; extruded food pellets; salt and salt-coated products; and food powders and spray-dried powder finishing. Continuous fluid bed dryers pass product from a feed inlet to a product outlet, with the bed divided into drying and cooling zones. Batch fluid bed dryers process a fixed charge of product per cycle.

Fluid bed drying works best for free-flowing granular or particulate materials in a relatively narrow particle size range. Typical suitable size ranges are from about 0.1 mm to 10 mm particle diameter — this covers most food granules, small grain, sugar, and extruded pellets. Very fine powders (below 0.1 mm) can be fluidised but require more careful air velocity control and good dust collection; they may be better suited to spray drying. Very large particles or non-free-flowing sticky materials do not fluidise well and should be dried in belt, tray, or rotary drum dryers. The specific fluidisation characteristics of any product — the minimum fluidisation velocity and the terminal velocity (above which particles are entrained and carried out of the bed) — should be determined by trials before designing a full-scale fluid bed dryer.
Can a fluid bed dryer also be used for cooling?
Yes — continuous fluid bed dryers typically incorporate a cooling zone after the drying zone, where ambient or chilled air is used instead of heated air to cool the product before discharge. This integrated cooling is one of the advantages of continuous fluid bed systems: the product is dried and cooled in a single pass through the machine. The cooling zone length and air temperature determine the final product outlet temperature. For products that must be packaged immediately after drying (to prevent moisture pick-up), achieving a sufficiently low outlet temperature in the cooling zone is important — hot product packed in sealed bags will generate condensation inside the bag on cooling, which can cause caking and microbial growth.
