Confectionery machinery covers a very wide range of product types and process technologies. The main segments include: chocolate processing (cocoa bean reception and cleaning; cocoa roasting; cracking and winnowing; cocoa liquor grinding; cocoa butter pressing; conching; tempering; moulding; enrobing; cooling tunnels; wrapping); hard candy (sugar cooking; pulling and mixing; forming — depositing into moulds, bar/rope pulling, stamping, or lollipop stick insertion; cooling; wrapping); gummy and pectin candy (sugar and gelatin/pectin cooking; colour and flavour addition; depositing into starch or silicone moulds; conditioning; demoulding; oiling and sanding; packing); toffee and caramel (sugar and fat cooking; cooling and forming; wrapping); and chewing gum (base blending; kneading; sheeting and scoring). For each product category, the process chemistry is substantially different, and the machinery is specifically designed for that product. Suppliers typically specialise in one or two product categories.
Frequently asked questions
What is chocolate tempering and why does it require a machine?
Chocolate tempering is the process of heating and carefully cooling chocolate to specific temperatures to ensure that cocoa butter crystallises in the correct stable crystal form (Form V polymorphic crystal). Properly tempered chocolate has a glossy surface, a clean snap, and does not bloom (develop white fat streaks) during storage. Incorrect tempering (under-tempered or over-tempered chocolate) produces dull, soft, or sticky chocolate that blooms rapidly. An industrial chocolate tempering machine automates the heating, cooling, and agitation cycle to precisely and consistently produce correctly tempered chocolate — manual tempering is not reliable at production scale. Industrial continuous tempering machines handle several hundred to thousands of kg of chocolate per hour.
What production capacity should I plan for a new chocolate enrobing line?
Chocolate enrobing lines are specified by the width of the enrobing belt (typically 400mm to 1,200mm for industrial lines) and the speed of the belt (which determines pieces per minute and kg of product per hour). The total output depends on the size of the product being enrobed and the packing density on the belt. Before specifying a line, calculate your required output in kg of finished enrobed product per shift, and work back to the required belt width and speed, taking into account the chocolate usage rate (the proportion of the finished product that is chocolate coating). Discuss your specific product dimensions and coating weight with the supplier — these parameters drive the equipment specification.
