Should I sort green beans or roasted beans?
Sorting green coffee before roasting is the first opportunity to remove defective beans and is standard in the wet milling and dry milling stages of coffee preparation at origin. Sorting roasted coffee is a second sorting step that catches defects not detected at the green stage — some defects only become visible after roasting (for example, a light-coloured roasted bean may reveal a void or quaker that was not visible in the green state). For premium specialty coffee, both green and roasted coffee sorting are standard. For commodity commercial roasting, green bean sorting at origin is the primary quality control step. Optical colour sorters designed for coffee are available in versions calibrated for both green and roasted beans — the colour and reflectance profiles differ significantly between the two stages.
What is a 'quaker' bean and how is it detected?
A quaker bean is an unripe coffee bean that did not develop fully on the tree and, when roasted, remains lighter in colour than the properly developed beans in the roast. Quakers have lower sucrose content and produce a flat, unpleasant, peanut-like flavour note if included in the cup. They are not detectable in green coffee visual inspection because they are similar in appearance to healthy green beans. After roasting, quakers are lighter — tan or buff-coloured — against the brown roasted beans and are detectable by optical colour sorting of roasted beans. High-quality specialty coffee that aims to minimise cup defects uses roasted bean colour sorting to remove quakers.
