Colour sorter machines — how they work and food applications
A colour sorter (optical sorter) detects the colour and surface appearance of individual product items as they pass through the sorting zone, and ejects defective or off-spec items using high-speed air jets. The product falls as a stream through a detection zone illuminated by high-intensity LED or halogen lights; cameras (CCD or CMOS sensors) capture the image of each item; image processing software compares the detected colour and shape against the acceptance criteria set for the product; items outside the acceptance criteria are ejected by precisely timed air jets into a reject stream. Modern colour sorters use multiple cameras (detecting the full surface of each item), near-infrared (NIR) sensors (detecting internal quality and surface contamination not visible in the visible spectrum), and AI-based image analysis. Colour sorters are used for: rice (removing discoloured, broken, and off-grade grains); grain and pulses; coffee (green bean and roasted bean defect removal); nuts and dried fruit; fresh produce; spice and seed sorting.
