Wholesale Potato Suppliers
Idaho and Washington State are the USA's dominant potato production regions. Russet Burbank (Idaho® certified) and Norkotah lead fresh and processing supply. USDA AMS No.1/No.2 grade standards govern domestic and export trade. The US processes approximately 60% of its potato crop into frozen fries, crisps, dehydrated flakes, and starch — supplied by Lamb Weston, McCain, and J.R. Simplot. Certified seed potato exports from the US are significant to Mexico and other regional markets.

Table ware potatoes: sold fresh for direct consumption; key quality parameters are skin appearance (smooth, no greenness), size (55–75 mm diameter for retail; 35–55 mm for pre-pack small/baby; 75+ mm for foodservice baking), flesh colour (yellow/white), and taste. Processing potatoes for frozen chips/fries: high dry matter (≥20% dry matter; specific gravity ≥1.080 measured by underwater weighing); low reducing sugar content (≤0.1% to avoid excessive Maillard browning — fried product colour specification: USDA colour standard 3 maximum); specific varieties: Russet Burbank (Idaho), Innovator, Frito-Lay varieties, Agria (Europe). Processing potatoes for crisps: highest dry matter (≥22%); very low reducing sugar (≤0.15%); round shape; key varieties: Lady Claire, Saturna, Fontane. Starch potatoes: highest starch content (≥16%); varieties include Karakter, Seresta; primarily Netherlands and Germany. Seed potatoes: certified virus-free, nematode-tested, generation-classified (Pre-basic → Basic → Certified C1 → C2) under official phytosanitary supervision.
