Dehydrated vegetables (dried vegetable ingredients) are widely used in instant noodles, soups, seasonings, snack mixes, ready meals, and pet food as convenient, shelf-stable ingredients. Commercial vegetable drying processes typically include: washing and inspection (removal of foreign material and off-grade material — see food washing and sorting pages); size reduction (slicing, dicing, mincing, or grinding to the target piece size or particle size); blanching (brief heat treatment in steam or hot water to inactivate enzymes that would cause colour and flavour degradation during drying — essential for most vegetables before drying); drying (belt dryer for most diced and sliced vegetables; tray dryer for smaller batches and varied products; rotary drum dryer for leafy, granular, or small-piece products); cooling; sieving and quality inspection; packing in moisture-barrier packaging. Key vegetable drying products include: dehydrated onion (flakes, granules, powder); dehydrated garlic (granules, powder); chilli powder and flakes; dehydrated tomato (flakes, powder); carrot dices; and mixed vegetable soup ingredients.
Frequently asked questions
Is blanching always required before vegetable drying?
Blanching (brief heat treatment in steam or hot water at 80–100°C for 1–5 minutes depending on the vegetable) inactivates the enzymes that cause deterioration of colour, flavour, and texture during and after drying. For most vegetables, blanching before drying is standard practice and essential for product quality: without blanching, enzymes (peroxidase, polyphenol oxidase) continue to act during drying, causing browning, off-flavour development, and loss of characteristic colour. Exceptions where blanching is not used or is optional include: dried chilli (the capsaicin chemistry does not require blanching, and the product is typically solar-dried or low-temperature dried); some garlic and onion products (blanching is not standard for allium products dried to very low moisture for grinding); and products where a raw, uncooked note in the flavour profile is desired. Always verify blanching requirements with the target product quality specification.
What packaging is required for dehydrated vegetables?
Dehydrated vegetables are hygroscopic — they readily absorb moisture from the surrounding atmosphere, which leads to caking, microbial growth, and quality deterioration. The primary packaging must provide an effective moisture barrier: multi-layer laminated pouches with a moisture-barrier layer (aluminium foil or metallised film) are standard for retail dehydrated vegetable products; kraft paper bags with a polyethylene inner liner are used for bulk industrial supply; modified atmosphere packaging (nitrogen flush or oxygen absorber sachets) extends shelf life by reducing oxidative rancidity and colour fading. The headspace moisture content at the time of sealing must be controlled — product packed warm with high-humidity air in the headspace will have a shorter shelf life. Packing in a dry environment and verifying the package integrity (seal strength testing) are part of quality assurance.
