Palm kernel oil (PKO) is extracted from the kernel — the inner seed — of the oil palm fruit, as distinct from palm oil which is extracted from the fruit's outer mesocarp. PKO and palm oil are produced from the same fruit but are entirely different oils with different fatty acid compositions, physical properties, and commercial applications.
Key distinction from palm oil: Palm oil is high in palmitic acid (a 16-carbon saturated fat) and oleic acid — giving it a semi-solid consistency at room temperature and a melting point around 35°C. Palm kernel oil is high in lauric acid (a 12-carbon saturated fat, approximately 48–50% of PKO's fatty acid profile) — making PKO a lauric oil, chemically similar to coconut oil. This lauric acid content gives PKO a sharper, steeper melting curve (solid at room temperature, melts cleanly in the mouth) and makes it commercially interchangeable with coconut oil in many applications.
