Spice and herb drying reduces moisture to the target level for safe processing, grinding, and storage. Many spices arrive at the processing facility with higher moisture than optimal — either because they were purchased at a lower price from growers or because of rainy season harvesting conditions. A dryer brings the moisture down to the target level for grinding (typically below 10–12%). The main dryer types for spice processing include: tray dryers (hot air cabinet dryers with spice on wire mesh trays — batch operation; suitable for a range of spice types and sizes; low capital cost; labour-intensive for large volumes); belt dryers (the spice material passes through a drying tunnel on a slow-moving mesh belt — continuous operation; more capital but less labour than tray dryers; suitable for materials that flow and spread on a belt); rotary drum dryers (whole spice material tumbles inside a slowly rotating drum with hot air — gentle, even drying; suitable for robust whole spice like coriander, fennel, and fenugreek); and low-temperature dryers with dehumidification (drying at 30–40°C rather than 60–80°C — essential for heat-sensitive spices where volatile aromatic compounds would be lost at higher temperature — basil, parsley, and other volatile-herb species).
