Maize (corn) can be processed by several different milling methods depending on the target product. Hammer milling is the simplest process: cleaned maize grain is passed through a hammer mill to produce unsorted whole-grain maize meal, commonly used in sub-Saharan Africa for ugali, sadza, and pap. It retains all bran and germ and has a shorter shelf life due to oil oxidation from the germ. Degermination milling removes the germ and bran before grinding, producing super-fine or sifted maize meal with improved shelf life and a whiter colour, using a degerminator (aspirated abrasive roller) followed by roller milling and sifting. Dry milling for grits uses roller mills and sifters to produce coarsely ground maize grits for corn snacks, breakfast cereals, and brewing adjuncts. Wet milling (industrial starch and glucose production) is a separate process requiring steeping, grinding, and centrifugal separation — it uses different equipment from dry milling and is beyond the scope of most small-to-mid scale maize mills.
