Washing removes soil, surface microorganisms, pesticide residues, and foreign material from vegetables before further processing or fresh-cut packaging. The appropriate washing method depends on the vegetable type: rotary drum washers (a rotating perforated drum through which the vegetable passes with spray water — effective for robust root vegetables: potatoes, carrots, beetroot, parsnips); immersion tanks with agitation (vegetables are immersed and agitated in a water bath — removes loose soil from leafy vegetables and semi-robust produce); spray washers (high-pressure spray heads apply water directly to the product surface — used as a secondary rinse after immersion or drum washing); and air-bubble washers (air is injected into the wash water tank creating turbulence that loosens soil and surface material from the vegetable — gentler than agitation, preferred for fragile salad leaves and soft fruits). For food safety-critical fresh-cut operations (ready-to-eat salads, fresh-cut vegetables), the wash water is treated with a sanitiser (typically chlorine at 50–200ppm free chlorine, or peracetic acid) to reduce the surface microbial load. Chlorine dose and contact time must be validated against the target log reduction.
